Italian Pignoli Cookies


Of all the cookies that are around in the world for the tasting, these Pignoli cookies rank the highest on my list of true favorites! I have a friend of Italian heritage who will (every once-in-a-blue-moon) make these cookies for a party or something, and she always makes just a few extra for me! A true delight these little cookies!


  • 8 ounces, weight Pignoli (pine Nuts)
  • ½ cups Granulated Sugar
  • ½ cups Confectioners Sugar
  • ¼ cups All-purpose Flour
  • 1 dash Salt
  • 8 ounces, weight Almond Paste
  • 2 whole Egg Whites
  • ½ teaspoons Almond Or Vanilla Extract

Directions: Preheat the oven to 300ºF. Line 2 cookie sheets with Silpat liners or parchment. Place pine nuts or pignoli in a shallow dish.

Combine granulated sugar, confectioners sugar, flour and salt in a medium bowl and lightly toss.

Place almond paste in a mixing bowl of an electric mixer and mix to break up. Add beaten egg whites and mix on low speed until smooth. Add almond extract and flour mixture and beat until flour is blended in, about 30 seconds. Do not over-beat.

Using a teaspoon or a scooper, scoop up a rounded spoon of dough and push the dough side into the pine nuts so that they stick to the dough.

Ease dough out of scoop so that pine nuts are facing up on baking sheet. Place 2″ apart and re-apply any loose nuts.

Bake cookies for about 25 minutes. Use a shorter baking time if you like soft cookies and a longer baking time if you like them chewy. Cool 1 minute and remove to a rack to cool completely. Dust with confectioners sugar.

Store in an airtight container in the refrigerator for up to 2 weeks.

Italian Cheese Bread Recipe

Italian Cheese Bread

  • 2 1/2 cups all purpose flour
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 TBSP. quick rise yeast
  • 1 cup warm water
  • 1 TBSP. vegetable oil


  • 1/3 cup Italian salad dressing
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried oregano
  • 1/4 tsp. dried thyme
  • dash of pepper
  • 1 TBSP. grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

In a bowl, combine the first four ingredients. Combine water and oil; add flour mixture/ Add additional flour if needed to form a soft dough. Knead 1-2 minutes or until smooth and elastic. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place for 20 minutes. Punch the dough down; place on a greased 12″ pizza pan and pat into 12″ circle. brush with salad dressing. Combine the seasonings; sprinkle over top. Sprinkle with cheeses. Bake @ 450 degrees for 15 minutes or until golden brown. Serve warm.

3. What is your profession or what are you studying? – We are both studying forms to several different Colleges!  lol

4. What has been your all time favorite post to write or favorite topic to blog about? – The post about the Perfect Brownie recipe was so much fun to write… basically writing about anything pertaining to the culinary arts is a favorite right now! :)

5. If you could go back in time and relive any memory – what would it be and why? To hard to decide = not sure!

6. Favorite film of all time? –We can’t decide! Anything Jane Austin (i.e Emma, Pride & Prejudice, Sense & Sensibility) Julie & Julia or Ratatouille! ...

Italian Chicken Soup recipe by The Pioneer Woman

I just wanted to let you in on a favorite soup of mine!  I first tried this recipe last fall, and it is a true crowd pleaser! 🙂

On side note: the reason why I’m not posting the recipe right here & now on Sweet 16’s Country Kitchen, is because The Pioneer Woman has a full length version (with pictures and everything!) already posted on her website….and also, i am working on a crock-pot/slow-cooker version of the recipe!  So anyways!  Head on over there for her fabulous –Recipe for Italian Chicken Soup – and enjoy her amazing recipe! 🙂
