3. What’s the last book you read (or are reading)? – The Witness by Josh McDowell & Argo by Antonio Mendez , & Matt Baglio

4. Dogs or cats? – Well, i do have a cat & he’s really the cutest thing- so i’ll say cats, but in general i’m not a huge animal person so i guess it really just depends on the particular animal!

5. If you could travel to any place in the world, where would you go?  – I’ve always wanted to visit Alaska, USA  , But Prince Edward Island, Canada is on my list too, so maybe one of those places!

Summer on the other hand – lets you where cute clothes, & go swimming & go running (with-out falling flat on your face!) but then if it’s too hot out, you really start wishing for some of that arctic winter air!  So it’s really a toss up of both!  lol

Sangria’s (Non-Alcoholic) & a day at the lake

Hey everybody! I know it’s been a while since i last posted 😥 …sorry ’bout that!  But while i’ve been gone, (from the blogging world anyway) i’ve been trying to drink in as much sun as possible (so that maybe i can finally get that tan!?) and so that led to my spending this past Monday up a my friends lake-house. We had a few doubts about the weather on our way up to the lake (as it was badly storming and we had to drive 30mph under the speed limit just to make it safely there!) But while i was up at the lake i had a great time looking through some cook-books, and picking some super great recipes to try! We made some guacamole (i’ll post the recipe soon!) and then the weather was finally nice enough for us to go out in the kayaks for an hour. It was a blast and i’ve got a  lot of recipes coming your way soon!

Ok so about this recipe : I’ve been on the hunt for some fun (Non-Alcoholic) cocktails or um (Mocktails i guess) recipes for some party’s i’m planing & this sangria recipe is a great fit to what i’ve been looking for! 😉  Hope ya’ll Enjoy it!

  • 2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser)

  • 1 cup freshly squeezed orange juice
  • 1 orange, sliced into thin rounds

Just before serving, stir in carbonated water. Serve in pretty glasses over ice.

Super Simple Sugar Cookies

sugar_cookiesWell the weather finally cooled down enough last night that i decided it was safe to make some cookies…i wanted the sugar variety, but needed a new recipe, so i started looking and ended-up finding this oneWho knew that you could use Vegetable Oil instead of butter or shortening in cookies!?  ~ These cookies are different than most other sugar cookies i’ve had, they have a softer, fluffy, almost-cake-like texture, but-  Based on my results (the finished cookies)  I would have to say that this recipe has ranked itself pretty high on the list as far as a “family-favorite” at my house! 🙂

  • 2 eggs
  • 3/4 cup sugar
  • 2/3 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon grated lemon peel (optional)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Additional sugar or colored sugar

Directions: In a large bowl, beat the eggs, sugar, oil, vanilla and lemon peel until blended. Combine the flour, baking powder and salt; gradually beat into egg mixture.
Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 8-10 minutes or until edges are lightly browned. Cool for 1-2 minutes before removing to wire racks to cool completely.  Yield: about 3-1/2 dozen.

Have any of you used  substitutes for butter or shortening in your cookies before?   Give a shout-out if you have any tried-&true tips or substitutes that you’d  like to share! 🙂

~as always ~

Chocolate Banana Smoothie Delight

Chocolate Banana Smoothie DelightThe past few days have blessed us with some very hot and humid weather that has had me dashing inside every 15 minuets for another drink of water….  So – during one of those “dashes” to the house  for a drink, I decided that i wanted something different than just plain ol’ water again, so i rummaged through the cupboards and freezer for a bit and finally found some random item’s that i decided would work to make-up this concoction i named a – Chocolate Banana Smoothie!   – A great thing about this recipe is that it’s a superb excuse for you to use-up your over-ripened bananas!  😉

 2-3 medium size Banana’s

1 large scoop of Vanilla Yogurt

 1 &1/2 tablespoons Coco Powder

1/2 cup Milk (or more) [ also you could use chocolate milk to give it a richer more “chocolaty” flavor!;) ]

Ice Cubes (i put about a handful)

Whipped Cream (optional)

Directions: Dump all the ingredients into blender and blend on high until smooth and creamy!   ~ Serve in pretty glasses (or not! lol) with a dollop of Whipped Cream! ~
